Coconut Cookie Bars

Ingredients:
1 cup coconut oil (extra virgin)
1/2-3/4 cup xylitol
2 eggs
1 tablespoon vanilla
3/4 cup coconut flour or almond flour
3/4 cup coconut flakes (unsweetened)
1/3 cup fresh ground flax seed
1/3 cup vanilla whey protein
1 teaspoon baking soda
1/2 teaspoon of salt
1/8 cup tapioca starch
Water as needed (about 1 1/2 cup)
2 cups walnuts
(Optional) Up to 2 cups of dark chocolate chips
Directions:
Preheat oven to 350 degrees. Combine and mix together coconut oil, xylitol, eggs and vanilla. In a separate bowl, combine all other ingredients. Gradually mix dry ingredients into wet ingredients. Add water as needed (or about 1 1/2 cups). Place mixture in to a 9 1/2 X 13 1/2 raised sided cookie sheet, press flat in pan and bake for 17 minutes.
